Japanese Egg Sandwich

If you've found your way here, you're either in the know or a lucky m'fker. For those who have had the pleasantry of traveling to Japan to experience one in person, you know why we try so hard to duplicate this national treasure. It's the grab-and-go snack that is sold at every conbini (the convenience stores in Japan, ala 7-11).
If you try to break it down in the most simple of ways, the magic lies in the fluffy, heavenly white Japanese bread along with the Japanese mayo. Wondering why this is the case? Don't worry, me too. Japanese mayonnaise has a rich egg flavor because only egg yolks are used compared to the American mayo that contains the entire egg. Also, Japanese mayo is typically made with rice vinegar or apple cider vinegar, instead of distilled vinegar. Trust me on this, order some Kewpie mayonnaise & never look back.
What is Tamago Sando?
Tamago (たまご) means eggs and Sando is a short for San-doh- itchi (サンドイッチ) – sandwich in Japanese.
Pro-Tips:
Use older but quality eggs, not the freshest eggs, if you want to peel the shells easily.
Use soft white bread if you can’t find Japanese white bread.
Add a dash of milk for a smooth texture
Don’t be afraid to add salt. For a simple dish like this, salt plays an important role in bringing out the flavors.
If you want your sandwich to taste very much like the 7-Eleven version, add a tiny bit of sugar for some sweetness. Otherwise, you can skip.
INGREDIENTS
3 large eggs
4 slices of white bread
salted butter
1/4 tsp sugar
1/4 tsp kosher sea salt
fresh ground black pepper
2 tsp milk
2 Tbsp Japanese mayonnaise
INSTRUCTIONS
Boil eggs in medium saucepan for 12 minutes. Make sure the water covers the eggs completely.
Transfer eggs immediately to an ice bath. Once cool, peel the egg shells.
Place the peeled eggs into a bowl and mash with a fork.
Add 1/4 tsp sugar & 1/4 tsp salt. Mix through.
Add fresh ground black pepper & 2 tsp milk. Add additional salt & pepper to taste.
Add 2 Tbsp mayonnaise and mix thoroughly.
Spread mix onto every other bread slice. Place other slice of bread on top and set aside for 5 minutes.
Cut off all sides of crust.
