Meatballs Au Poirve

My husband created a delicious creation - a take on Steak Au Poirve, the famous French peppercorn-heavy sauced steak dish. He thought, why do we reserve this magical pepper-heavy sauce for filet mignon? Let us know if you try it yourself!

Ingredients:

  • We used half Crowd Cow organic, grass-fed ground beef and half ground pork (from Sprouts)

  • Smashed pork rinds (in lieu of breadcrumbs) with one egg

  • Killer Hog's BBQ Texas Brisket Rub (buy it HERE *Amazon affiliate link)

  • Lots of peppercorn. Whole & ground

  • Half a shallot

  • 3 cloves of minced garlic

  • Grass-fed heavy cream

  • Grass-fed butter (we get ours from Costco)


*The meatballs and sauce are gluten-free
